Yields: 2 dozen cookies

Ingredients
1 1/4 cup of all-purpose flour (spooned and leveled)
1/4 cup of cake flour
1 1/2 teaspoons of baking powder
Pinch of salt
10 tablespoons of unsalted butter, softened
3/4 cup of granulated sugar
1 large egg
1 teaspoon of pure vanilla extract
1/4 teaspoon of almond extract (optional)
Instructions
In a large bowl, mix the butter and sugar on medium speed for 2 minutes or until fluffy. Add in the egg, vanilla extract, and almond extract. Mix.
In a separate bowl, mix the flour, baking powder, and salt. Add the dry ingredients into the wet ingredients. The dough should be thick.
Prepare a baking sheet with parchment paper.
Make small balls of dough and place on the prepared baking sheet, keeping about 2 inches of space between each cookie.
Chill the dough in the refrigerator for at least 2 hours.
Preheat the oven to 350°F (177°C). Bake for 10-12 minutes or until lightly golden brown.
Remove the cookies from the oven and let cool for at least five minutes before handling.
Notes
Almond extract: This adds a wonderful, strong flavor to the cookies.
Sprinkles: To make confetti style cookies, add 1/2 cup of sprinkles to the dough before you chill the balls.
