Description

These cookies have 1 component.

  1. Dough

Prep time: 2 hours and 15 minutes

Cook time: 10-12 minutes

Total time: 2 hours and 25 minutes

Yields: 2 dozen cookies

Ingredients

  1. 1 1/4 cup of all-purpose flour (spooned and leveled)

  2. 1/4 cup of cake flour

  3. 1 1/2 teaspoons of baking powder

  4. Pinch of salt

  5. 10 tablespoons of unsalted butter, softened

  6. 3/4 cup of granulated sugar

  7. 1 large egg

  8. 1 teaspoon of pure vanilla extract

  9. 1/4 teaspoon of almond extract (optional)

Instructions

  1. In a large bowl, mix the butter and sugar on medium speed for 2 minutes or until fluffy. Add in the egg, vanilla extract, and almond extract. Mix.

  2. In a separate bowl, mix the flour, baking powder, and salt. Add the dry ingredients into the wet ingredients. The dough should be thick.

  3. Prepare a baking sheet with parchment paper.

  4. Make small balls of dough and place on the prepared baking sheet, keeping about 2 inches of space between each cookie.

  5. Chill the dough in the refrigerator for at least 2 hours.

  6. Preheat the oven to 350°F (177°C). Bake for 10-12 minutes or until lightly golden brown.

  7. Remove the cookies from the oven and let cool for at least five minutes before handling.

Notes

  1. Almond extract: This adds a wonderful, strong flavor to the cookies.

  2. Sprinkles: To make confetti style cookies, add 1/2 cup of sprinkles to the dough before you chill the balls.
