Ingredients
22 tablespoons of unsalted butter (2 sticks and 6 tablespoons), softened
1 cup of light or dark brown sugar
1/4 cup of granulated sugar
1 egg
2 teaspoons of pure vanilla extract
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of salt
1 1/2 cups of all-purpose flour (spooned and leveled)
3 cups Quaker Oats (uncooked)
Instructions
Preheat the oven to 375°F (190°C). Prepare a baking sheet with parchment paper.
In a large bowl, mix the flour, baking soda, cinnamon, and salt.
In a separate bowl, beat the butter and sugar on medium speed for 2 minutes or until fluffy. Add in the egg and vanilla extract. Mix.
Pour the dry ingredients into the wet ingredients and mix. Stir in the oats.
Form small balls of dough (about 1 tablespoon in size). Place on the prepared baking sheet, keeping about 2 inches in between each.
Bake for 8-10 minutes or until golden brown. Remove from the oven and cool completely.
Notes
Variations: You can add about 1 cup of raisins or 1 cup of chopped nuts to the batter for added texture and flavor.
