Yields: 3 dozen cookies

Ingredients
3 cups of all-purpose flour (spooned and leveled)
1/4 cups of cake flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
1 cup creamy peanut butter
1 teaspoon of pure vanilla extract
2 large eggs
1 3/4 cup of light or dark brown sugar
1 cup of unsalted butter, softened
1/4 cup of granulated sugar for rolling
Instructions
In a large bowl, mix the flour, baking soda, baking powder, and salt.
In a separate bowl, whisk the butter and sugar on medium speed for 2 minutes or until fluffy.
Add the eggs, one at a time and stirring after each addition. Mix in the vanilla extract and peanut butter.
Mix the dry ingredients into the wet ingredients.
Prepare a baking sheet with parchment paper.
Make small balls of dough and roll in granulated sugar. Place on the prepared baking sheet, keeping about 2 inches of space between each cookie.
Chill the dough in the refrigerator for at least 3 hours.
Preheat the oven to 350°F (177°C). Bake for 10-12 minutes or until lightly golden brown.
Remove the cookies from the oven and let cool for at least five minutes before handling.
Notes
Peanut butter: I suggest using Skippy or Jif peanut butter, not the all natural peanut butters (too oily). Crunchy peanut butter can additionally work in these cookies.
