What's better than homemade ice cream? A homemade ice cream sandwich! This recipe is a great play on the classic s'mores. Sandwiches between two graham crackers is a giant toasted marshmallow and a scoop of graham cracker and marshmallow ice cream. Coat the sides with mini chocolate chips and there you have it! Perfect for any summer day!

These s'mores ice cream sandwiches have 4 components.
Graham Crackers

Graham cracker and marshmallow ice cream

Yields: 12-14 muffins

Ingredients
1 cup of heavy cream
1 12 oz can of sweetened condensed milk
1 cup of confectioners' sugar
1/2 teaspoon of vanilla extract
Pinch of salt
1 chocolate bar
17 graham crackers (set 5 aside, makes 12 ice cream sandwiches)
20 giant marshmallows (set aside 8)
1/2 cup of mini chocolate chips
Instructions
In a large bowl, whip the heavy cream on medium speed until stiff peaks form.
Stir in the condensed milk, sugar, vanilla extract, and salt.
In a food processor, pulse the chocolate bar and 5 graham crackers until small chunks form. Add it to the ice cream base and stir.
Prepare a baking sheet with parchment paper. Place 8 giant marshmallows on top and broil in the oven until golden brown. Remove from the oven and let it cool for at least 5 minutes. Break the marshmallows up into small chunks. Stir.
Place the ice cream base in the freezer for 3 hours.
Right before you remove the ice cream from the freezer, place the remaining 12 marshmallows on a prepared baking sheet and toast. Remove from the oven.
To construct the ice cream sandwiches, place a toasted marshmallow on top of the graham cracker square. Add a scoop of ice cream on top. Coat with mini chocolate chips. Add a graham cracker square on top.
Notes
You can adjust the amount of graham crackers, chocolate, and marshmallows you want to add to the ice cream base.
