These cream puffs have 2 components.
Choux Pastry
Whipped Cream Filling

Yields: 2 dozen cream puffs


Ingredients
Choux Pastry
1/2 cup of warm water
1/2 cup of whole milk
9 tablespoons of unsalted butter
2 tablespoons of granulated sugar
Pinch of salt
1 cup all-purpose flour (spooned and leveled)
4 eggs (room temperature)
Whipped Cream Filling
2 cups heavy whipping cream
2 tablespoons of confectioners' sugar
1 teaspoon of vanilla extract
Instructions
Preheat your oven to 425 °F (218°C). Line a baking sheet with parchment paper.
In a saucepan on medium heat, combine the water, milk, butter, sugar, and salt. Mix it for 3-4 minutes or until it begins simmering. Add the flour. Reduce to low heat. Once a film forms on the bottom of the pan, remove the pan from heat.
Put the dough in a large bowl and beat for 1 minute to cool the mixture.
One at a time, add the eggs, mixing completely after each addition. It's crucial to not rush this step. The dough should be smooth.
Transfer the dough to a piping bag with a 1/2 inch round tip. Pipe 24 2 inch balls on the baking sheet, making sure to keep at least 2 inches between each puff. With a wet finger, tap the tops of the puffs to get rid of any peaks.
Bake for 10 minutes. Then, reduce the oven to 325 °F (162°C) and bake for an additional 20 minutes or until golden. Do NOT open the oven as the puffs cook or they will deflate.
Once you remove the puffs from the oven, whip the heavy whipping cream, sugar, and vanilla extract in a large bowl until you have a fluffy whipped cream (should take 2 minutes on high speed).
Let the puffs cool completely before filling. Poke a whole in the bottom of the pastry and fill with your whipped cream until the puffs feel noticeably heavier. Another option is cutting the puff in half and filling with the whipped cream. Both options are shown above! Dust with confectioners' sugar or drizzle with chocolate.
Notes
Filling: You can replace the whipped cream filling with any desired flavor profile, such as chocolate or raspberry.
