Ingredients
Dough
3 cups all-purpose flour (spooned and leveled)
1/4 cup + 1 tablespoon granulated sugar
1/4 teaspoon of salt
2 1/4 teaspoons (1 packet) of instant yeast (I recommend Red Star Platinum Yeast)
1/2 cup of whole milk
4 tablespoons of salted butter
1/4 cup of water
2 eggs (room temperature)
Filling
6 tablespoons of unsalted butter (melted)
1/2 cup of light or dark brown sugar
2 tablespoons of cinnamon
Icing
1 cup confectioner's sugar
3 tablespoons of whole milk
1/2 teaspoon pure vanilla extract
Instructions
In a stand mixer, mix the flour, sugar, salt, and yeast.
In a pan on a stovetop, heat the milk, butter, and water on medium heat for 2-3 minutes or until the butter is melted. Pour into the bowl of dry ingredients.
Add one egg and mix completely using a dough hook. Add the other egg and mix.
If your mixture is too soft, add one tablespoon of flour into the mixture at a time until it's the consistency you would like. If your mixture is too dry, add one tablespoon of water into the mixture.
Lightly flour a flat surface and knead the dough for 4 minutes. Roll the dough into a ball and place into a lightly greased bowl. Cover with plastic wrap and let it rest for 15 minutes.
Roll out the dough on the lightly floured surface until its fairly thin ( around 1/4 of an inch thick) and rectangular in shape.
For the filling, melt the butter in a microwave safe bowl until it is melted. Mix in the sugar and cinnamon. Spread the filling over the dough, being sure to cover as much surface area as possible.
Starting on one end, roll the dough into a tight log shape. Then, using a sharp knife, cut into 10-12 evenly sized rolls.
Place the rolls in a deep dish pan. Cover the top with plastic wrap and let it rise for around 90 minutes or until the rolls double in size.
Preheat the oven to 375°F (190°C). Bake for 28-30 minutes or until golden.
While the rolls are baking, make your icing by mixing the sugar, milk, and vanilla. Remove the rolls from the oven. While still warm, pour the icing over the rolls.
Notes
Make ahead instructions: Once you roll out the dough and top with the cinnamon sugar mixture, you can cover the dough with plastic wrap and place in the refrigerator for up to 12 hours. Be sure to remove the dough for at least an hour before baking.
Tip: Don't overcrowd the pan during the rising process. It's important to give the rolls space to breath.
