Yields: 6 servings

Ingredients
4 tablespoons of unsalted butter
3/4 cup of semisweet chocolate
3 large pasteurized eggs, yolks and whites separate
1/2 teaspoon cream of tartar
1/2 cup of confectioners' sugar
1/2 cup of heavy cream
3/4 teaspoon of vanilla extract
Instructions
In a large saucepan, place the butter and chocolate on medium heat. Stir until completely melted. Remove from the heat and let it sit for 3-5 minutes.
Gradually mix in the egg yolks, one at a time.
In a stand mixer, whip the egg whites on medium-high speed until foamy. Add in the cream of tartar and 1/4 cup of the confectioners' sugar and mix until soft peaks form.
Gently fold the egg white mixture into the chocolate mixture.
In another bowl, whip the heavy cream and the remaining 1/4 cup of powdered sugar on medium-speed. Add the vanilla and mix until stiff peaks form. Do not over mix.
Gently fold the chocolate mixture into the whipped cream. Let it chill in the refrigerator for at least 2 hours.
Notes
Pasteurized eggs: While this mousse is made with raw eggs, pasteurized eggs have been heated to remove bacteria.
