Banana Muffins!

These muffins are quick and easy to make! Perfect to make if you have a busy week ahead of you. Grab a muffin on the way out in the morning, and you have a delicious, convenient breakfast!

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35 minutes

Yields: 12-14 muffins




Ingredients

  1. 1 1/2 cups all-purpose flour (spooned and leveled)

  2. 1/2 teaspoon baking powder

  3. 1 1/4 teaspoon baking soda

  4. 1/2 teaspoon salt

  5. 3/4 teaspoon ground cinnamon

  6. 1/4 teaspoon ground nutmeg

  7. 1 1/2 cups of mashed bananas (about 3 large bananas)

  8. 6 tablespoons unsalted butter, melted

  9. 2/3 cup + 2 tablespoons light or dark brown sugar

  10. 1 1/2 teaspoons of vanilla extract

  11. 1 large egg

  12. 4 tablespoons of plain greek yogurt


Instructions

  1. Preheat your oven to 425°F (218°C). Line a muffin tin with cupcake liners.

  2. In a stand mixer, mash your bananas. Add butter, brown sugar, vanilla extract, egg, and plain greek yogurt. Set aside.

  3. In a large bowl, mix the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Slowly add the dry ingredients to the wet ingredients.

  4. Using an ice cream scoop, spoon the batter into the prepared cupcake liners. Bake for 5 minutes at 425°F (218°C), then lower the oven to 350°F (177°C) and bake for another 15 minutes. Remove the muffins from the tins and let them sit for a few minutes.

 

Notes

  1. Optional: you can add 1 cup of chopped walnuts or mini chocolate chips to the batter for added flavor and texture.

  2. Greek yogurt: This helps activate the baking soda in your batter, keeping your muffins moist and fluffy for a longer period of time.
